Tuna Noodle Casserole

My grandchildren like this

Ingredients

  • 10 oz wide egg noodles
  • 3 Tlb butter
  • 3-4 cloves garlic
  • 2 large shallots, diced sm
  • 2 Tbl flour
  • 3 cups half n half
  • 2 tsp dijon mustard
  • 8- 10 oz sharp cheddar
  • 3 (5 oz) tuna, drained
  • 1 cup frozen green peas
  • salt & pepper
  • 2 Tbl chopped fresh chives
  • Topping: 1/3 cup panko
  • 1/3 cup freshly grated parmesan
  • 1 Tbl lemon zest
  • 1 Tbl olive oil
  • Instructions:
  • In a lg pot of boiling salted water, cook pasta according to pkg, drain well
  • Preheat oven 400F
  • Melt butter in dutch oven over med heat. Add shallots, garlic, cook 2 min.
  • Whisk in flour for a min.
  • stir half n half and dijon until slightly thickened, 4-5 min.
  • remove from heat. Stir in pasta, tuna, peas until well combined; season to taste. sprinkle with panko mixture
  • place into casserole dish (9×13) bake until golden and bubbly 25-30
  • serve immediately garnished with chives
  • Panko mixture; combine with parmesan, lemon zest and olive oil
